Tuesday Dinner - Chicken Biscuit Casserole




I have a very picky eater in my house, and so I have to really think about what he will or will not eat.  If I listed the things he doesn't like to eat, the list would be very long.  Tonight I tried this recipe and he loved it.  He ate two helpings.  Yea!  Believe me, we have tried many tactics to try to get him to eat.  I will not have him living on cold cereal, so I try to accommodate him somewhat.  Chalk this one up for a winner!

2 cups cooked cubed chicken
1 can Cream of Chicken Soup
Steamed Broccoli or 8 oz. green beans, drained
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1 tsp. lemon juice
1 Can Hungry Jack Flaky Biscuits
1-2 Tbls. butter melted
1/2 cup goldfish crackers smashed up.

Set oven to 375 degrees. 

In a saucepan, combine chicken, soup, broccoli (or green beans), cheese, mayo and lemon juice.  Heat until hot and bubbly.  Pour in a 2 qt. casserole dish.  Top with biscuits, brush with butter, sprinkle goldfish crackers on top of biscuits.  Bake for 25 minutes or until biscuits are golden brown.
