Banana Crunch Cake




My good friend Lisa put this recipe in our church cookbook a few years ago.  Although it is considered a cake, I have had it at Brunch and loved it.  A lot of my recipes have brown sugar in them.  I'm a HUGE FAN of Brown Sugar.  This recipe doesn't disappoint with the two cups included in the Crunch.  Enjoy!!


Crunch:
1 cup coconut
1 cup oatmeal
1/2 cup Walnuts or Pecans
1/2 cup Butter, melted
2 cups packed Brown sugar
1/2 cup flour
Combine crunch ingredients together and set aside.


Cake:
1 yellow cake mix
4 eggs
1/2 cup sour cream
1 1/2 cups bananas (2-3 large, ripe)



Combine cake ingredients together and mix for 2 minutes on medium speed.  Thoroughly grease and flour a bundt pan.  Layer 1/3 of the crunch mix, 1/2 the cake, 1/3 the crunch, the rest of the cake, and the rest of the crunch.  Bake at 350 degrees for 50-60 minutes.


The house smells divine.
