Orzo with Spinach and Feta

I made this as a side dish for Christmas this year.  It is light, delicious, and everyone loved it.  Plus, it looked pretty in the bowl.  It would be a great side dish any night of the week.

1/2 pound orzo
1 pound spinach, trimmed and chopped
1/2 cup crumbled feta cheese
2 tbls. lemon juice
1 tbls. olive oil
Salt and Pepper
Optional additions:  pine nuts, basil, mint, red onion, black olives
Cook the orzo according to directions on package.

During the last minute of cooking time, stir in the spinach.  Once the spinach wilts, drain the orzo and spinach, and place them in a large bowl.

Add feta, lemon juice, olive oil and any optional additions you want.  Toss.  Season with salt and pepper.
